Sous Chef required for a Characteristic Hotel in Warwickshire. Salary £32,000 please note this is a live out position.
This characteristic hotel has 50 bedrooms and a restaurant, you will be using all fresh locally sourced produce.
It is imperative that as a Sous Chef you are able to work calmly and professionally when under pressure and in the absence of the Head Chef. You will be working with a small team of chefs and previous experience in rosette establishments is required.
Duties of a Sous Chef:
Assist the Head Chef with the day to day running of the kitchen and to take over in their absence.
Work across all sections of the kitchen, providing support and guidance where needed.
Assist with the training and development of the junior members of the team.
Help with menu creation- bringing ideas to the table using all fresh seasonal produce whilst being aware of dietary requirements and allergies.
Adopt and maintain the strict food safety and hygiene protocols.
Ensure all daily checklists and HACCP are complete (i.e. date labelling, temperature checks, probe calibration).
Stock take and costings.
What we need from you as a Sous Chef:
Experience in a rosette establishment is required.
You will be able to support the Head Chef and take control of the kitchen in the Head Chef's absence.
You will have the ability to work unsupervised with strong management skills.
As always, it is very important that you are a team player with a steady career history.
You must be highly motivated, focused with a positive attitude.
